Chicken and Rice Meals

Originally in the 2005 cookbook

Dinner Sauce Vegetables Add-Ons
Asian – 1 can chicken broth
– 1/2 cup water
– 3-4 tbsp soy sauce
– 3/4 tsp garlic powder
2 cups stir fry vegetables, fresh or thawed sprinkle of peanuts
Mexican – 1 cup salsa
– 1 cup water
1 cup corn or 1 cup black beans, drained 1 cup shredded cheddar cheese
Italian Parmesan – 1 cup spaghetti sauce
– 1 cup water
1/2 cup sliced mushrooms 1 cup shredded Mozzarella and a sprinkle of grated
Parmesan cheese

Main Ingredients and Instructions

2 cups uncooked instant rice
1 pound (about 4) boneless skinless chicken breast halves


  1. Cook rice.
  2. Cook chicken in skillet in oil at medium heat until done. Remove from heat
  3. Bring sauce to boil.
  4. Stir in vegetables and rice.
  5. Top with chicken and add ons.
  6. Cover and cook on low heat 5 minutes.

Makes 4 servings
